Shinjiko, the lake bordering our factory’s city of Matsue, boasts the largest shijimi clam harvest in Japan. Matsue also holds the top spot for shijimi clam purchases per household nationwide, making it the region most closely connected to shijimi clams in Japan.

Among the three main types of shijimi clams found in Japan, the shijimi harvested from Shinjiko is the Yamato Shijimi, a brackish-water variety. Known for its large size, thick flesh, and firm texture, it delivers a rich and refined umami flavor that sets it apart.

Preserving shijimi clams as a valuable natural resource is vital. Strict rules and resource management systems are in place to ensure the sustainable continuation of traditional shijimi fishing for generations to come.
