At Nakataka, we are proud to be based in Shimane Prefecture, but our love for regional Japanese flavors extends beyond our home. That’s why we also produce Tottori’s famous Gyukotsu Ramen (Beef Bone Ramen)—a local specialty beloved for its rich and savory broth.
What is Gyukotsu Ramen?

Gyukotsu Ramen is a specialty of Tottori Prefecture, located next to Shimane. Unlike traditional tonkotsu (pork bone) ramen, this dish features a beef bone-based broth, which is simmered for hours to extract deep umami flavors. The result is a lighter yet rich and aromatic soup with a delicate sweetness. Typically paired with thin, curly noodles and toppings like green onions, bamboo shoots, and chashu (braised pork belly), this ramen offers a unique taste experience not found elsewhere in Japan.
A Taste of Tottori’s Food Culture

Tottori Prefecture is a hidden gem for food lovers, known for its fresh seafood, premium Wagyu beef, and distinctive ramen culture. In recognition of its rich culinary heritage, we at Nakataka proudly serve as Ambassadors for “Tottori’s Food Paradise”, a project that showcases the best of Tottori’s cuisine to the world.
